Green Tea Mousse

4 cups Hemp milk

¼ tsp sea salt

¾ cup brown rice syrup

1 tbsp green tea matcha, dissolved in a small amount of cold water

4 tbsp agar agar

2 tsp vanilla

1 tsp lemon extract

2 cups fresh blueberries

2 tsp minced mint

1 cup toasted slivered almonds for garnish

 

Pour liquid in a pot, add agar agar flakes, sea salt and brown rice syrup. Bring to a boil and cook it over low-medium flame whisking from time to time to prevent agar-agar from sticking to the bottom of the pot. Agar agar should dissolve within 10-15 minutes. Add matcha, vanilla and lemon extract. Mix very well. Pour this hot mixture into a glass or ceramic dish and let cool down until firmly set.

Liquefy this hardened gel in a blender or with the hand blender. Remove and mix in fresh blueberries and mint. Garnish with almonds. Can be chilled before serving.
