Gingered Up Cabbage-Apple Salad


4 cups cabbage, cubed

1 cup carrots, thin half moons

1 cup any sweet apple, diced

2 Tbsp ginger, small dice

2 tbsp parsley, minced


Bring to a boil 2 cups of spring water in a steaming pot. Place cabbage into a steaming basket and insert into the pot with boiling water. Cover, allow to steam for 3-5 minutes. Remove cabbage and place on a flat plate. Place carrots, apple, and ginger in the steaming basket. Insert into the pot and allow to steam 3 minutes. Remove and place on the plate.

When vegetables cool down, transfer to a salad mixing bowl, add parsley, and toss well.


Mustard-Tahini Dressing:

¼ cup tahini

¼ cup mustard

1 tsp umeboshi vinegar

Juice of 1 orange or ¼ cup water

1 tsp tamari

1 tbsp brown rice syrup


Mix all ingredients. Adjust to the taste.
